  2. In a large skillet over medium-high, heat the 3 tablespoons of oil. Turn it occasionally and cook all sausages, until it takes brown colour on all sides, at least for 6–7 minutes, keeps it on a plate.
  3. Using salt and pepper cover the chicken completely on both sides. Cook in the same skillet, turn it occasionally and cook in a similar skillet until it takes golden brown colour on all sides, at least for 8–10 minutes, along with sausages shift it to plate.
  4. Cook for 10 to 12 min over medium-high heat by adding garlic, onions, bell pepper, stir it occasionally until it takes brown colour, scarp the bottom of the pan. Mix wine with it and cook, stir it all the time, stop when it gets reduced and when there will be no smell of alcohol for 8 minutes. Mix vinegar, broth, peppers, rosemary in it and boil, for 5 min cook it until it gets slightly reduced, Make the chicken settle nicely in the onion mixture, then shift the skillet on the upper rack of the oven and for 10 min roast the chicken. Roast the chicken completely, add sausages to it, push them in onion mixture and let it get cooked.
  5. Sprinkle some freshly chopped parsley and serve the dish with roasted potatoes.

  5. With remaining 1 tablespoon of lemon juice, toss endive in the medium-sized bowl. Sprinkle the fat from skillet, mix it some with salt, and toss nicely.
  6. Separate the bread in two parts and with a paring knife poke it and make few holes (it can help the bread to soak chicken juices). Arrange it on plates and chicken thighs. Decorate with some endive leaves and sprinkle some hot honey on the chicken.

Hey r/cooking friendos! Long story short I wanna make some wow factor chicken thighs tomorrow, and I want to pick your brains!

I was thinking of doing a braised thing since I have a Dutch oven, but I also have a grill, slow cooker, pressure cooker, and immersion cooker for sous vide at my disposal. Thanks in advance for inspiration!

Any sort of dry spices (I do garlic salt and lemon pepper mix) + butter under and on the skin. Bake at 425 for around 45 mins and the skin comes out so crispy. It's not hugely fancy, but the crispy skin makes it so delicious.

Here's my question. Butter's smoke point is much lower than 425 so how do you keep the butter under the skin from smoking like crazy? Would ghee be better? Since it's smoke point is higher?

I love grilled teriyaki thighs.

Also love this. Pound them to a uniform thickness, marinate 1-24 hrs in any teriyaki sauce (homemade or jar) and grill for a few minutes over high heat. Slice and serve with white rice.

Something I've been making for years. Easy and tastes great.


Mix these together to make a rub.

1 3 pound chicken, cut into 8 pieces (or 8 chicken thighs or similar)

1 green bell pepper, chopped

1 red bell pepper, chopped

1 28 oz can ready-cut peeled tomatoes

1 1/2 Cups chicken stock or canned broth

1/4 cup chopped green onions

1/4 cup chopped fresh parsley

1 1/2 cups long grain white rice

1/2/ cup chopped raisins (optional)

Rub the mix you made at the top onto the chicken. Save 2 Tbsp of the rub for the rice later.

Dip chicken into flour, shake off excess.

Heat oil in large heavy skillet.

Add chicken and brown well, turning frequently.

Transfer chicken to paper towels and drain excess oil from skillet, leave enough for the next sauté steps.

Add 2 onions, bell peppers, garlic and cumin to skillet and sauté until onions brown a bit.

Mix in tomatoes, stock, green onions and 1/4 cup parsley.

Arrange chicken in large baking dish. Pour sauce over chicken.

Bake until cooked through, about 35 minutes, or longer to tenderfy the chicken even more.

Grab a beer, then make rice…

Add rice and remaining 2 tsp of spice rub. Cook 2 minutes, stirring constantly.

Add 3 cups water and bring to a boil. Cover, reduce heat until rice is done…blah blah blah…you know how to make rice….
