This is the easiest (vegan) pancake recipe you can try! You only need 4 ingredients to make the basic recipe for fasting pancakes and you can serve them with your favorite toppings.

I decided to start with a relatively simple recipe & ndash fasting pancakes! It's the first time I make pancakes without an egg but I was delighted with how well they turned out. Psyllium bran I'm the secret!

If you've tried my recipes before, you've probably heard of psyllium bran. I use them often and I consider that they should exist in the kitchen of every vegetarian and not only!

Psyllium bran is the best substitute for eggs in fasting recipes. I used them in vegetarian meatballs and connects perfectly every time, in & lsquocheesecakes & rsquo, quiche vegan and even in the pretentious dough of tempura! They are similar in use to ground flax but 10 times better.

Psyllium husks are fibers from the seeds of the Plantago Ovata plant and are most often used as natural laxatives, being perfect for those who have problems with constipation. They will clean your intestines immediately, but I don't think you want to hear about such details in a recipe & hellip :))

In small quantities they will not have substantial laxative effects but if you consume them regularly they will improve your digestion through the extra fiber they bring in the diet. Psyllium is also an excellent prebiotic, practically feeding the good bacteria in the intestines.

I could write an entire article just about them, which I will probably do soon, but what you need to know is that they are healthy and a very good egg substitute in fasting / vegan recipes. They are also very cheap and you can find them almost anywhere, from online stores to any ceiling in the neighborhood.

IMPORTANT! Use psyllium bran not whole psyllium seeds. The bran in contact with water turns into a sticky, transparent gel.

Low-carb almond flour pancakes

In a bowl, beat all the components of the recipe. Heat a pancake pan, grease with a little butter or coconut oil and pour ¼ from the dough, turning the pan to spread the dough evenly. Bake the pancake for 1-2 minutes, then turn on the other side with a spatula. Hold for a maximum of 1 minute, then remove to a plate. Do the same with the rest of the dough.

Serve either with low-carb sweet fillings (sugar-free jam, cow's cheese sweetened with stevia / erythritol, sour cream), or with salty fillings (smoked salmon, liver pate, cream cheese).

To make fasting pancakes with jam you need:

  • 300 g. Flour
  • 600 ml. mineral water
  • 1 teaspoon salt
  • 2 tablespoons powdered sugar
  • 1 vanilla essence
  • 3 tablespoons oil
  • Cherry jam

Method of preparation:

Take a large bowl and add the flour. Gradually add the mineral water and the rest of the ingredients and mix well with a whisk. Set the dough aside a little and heat a non-stick pan in which you put a few drops of oil.

Knead the dough with the polish and pour it into the pan enough to cover the whole surface, then let it fry, turn it on the other side and let it fry for about 1 minute. The fire should be medium to low, so as not to burn the pancakes.

Then fill each pancake with cherry jam or any jam or jam you prefer, powder them with sugar and serve. You can fill these pancakes with fasting vanilla pudding, caramel cream or even honey.

If you want, you can make these pancakes without sugar in the composition and you can make them salty. You can fill them with mushrooms hardened with garlic and dill or even cabbage or other fasting fillings.

If you want to make fluffy pancakes, the famous American pancakes, then you can add a little baking powder to the composition. You will need to add more flour and about half a sachet of baking powder, so that the composition has the texture of a thick cream.

They are fried just like the classic ones and can be served with fresh fruit on top and various syrups.
