Mega delicious, it reminds me very much of original satays from Bangkok-sweet and sour. I used chicken skinless legs instead of breast as it is more moist and still delicious.-02 Jul 2017

It's that time of year, weather is gradually getting warmer and so we are likely to spend more time outside. Which can only mean one thing. Barbecue season!!

Although if you live in Canada, we really don't care what kind of weather there is. Barbecue food is just the best, so it's not uncommon to see a Canadian out grilling on the barbecue from an open garage in the snow.

There is nothing like a barbecue with the family and a selection of different foods to choose from. However, It can be all to tempting to pick unhealthy options when all that delicious food is in front of you. So instead, why not plan a barbecue with some of these delicious healthy recipes that are perfect for cooking on the barbecue instead of the traditional stove top or oven method on the recipe.

Here are some great Slimming Eats recipes that can be grilled on the barbecue, as well as some perfect sides and cold treats to enjoy later.

For items with a marinade. I recommend marinating in the sauce as specified in the recipe, and then adding to the grill/barbecue saving the marinade and brushing as you grill to get that perfect barbecue result.

Shredded BBQ Chicken is ready in 25 minutes with a handful of ingredients. It’s tender, juicy, flavorful, and perfect to serve in a sandwich!

This quick chicken makes an easy alternative to BBQ Pulled Chicken. Cut the cooking time in half with this simple recipe, and you can enjoy a barbecue chicken sandwich for your Dinner in practically no time!

SHREDDED BBQ CHICKEN

This barbecue chicken sandwich recipe is made super easy by boiling the chicken breasts, and then cooking them in BBQ sauce for delicious flavors. Serving the BBQ shredded chicken with buns makes for a delicious and simple dinner perfect for a busy weeknight that your whole family is sure to love.

Add any of your favorite sandwich toppings to go along with the bbq shredded chicken sandwich. The basic barbecue chicken would taste great topped off with pickles or Coleslaw.

As far as the sauce, we’ve made a few different versions of homemade barbecue sauce that you can try in this recipe to experiment with the flavors. Instead of regular BBQ Sauce try our Memphis BBQ Sauce or Root Beer BBQ Sauce to Change things up.

When you’re putting together the BBQ Chicken sandwiches, feel free to use your favorite kind of bun. It would taste great with regular hamburger buns, hoagies, french rolls, or brioche hamburger buns. You could also steer away from a simple dinner option, and turn these into a party appetizer with mini buns to make chicken sliders.

The BBQ flavoring makes the dish similar to your favorite cookout recipes, but making it on the stovetop means you can enjoy it year-round. Serve the weeknight meal with your favorite BBQ sides like Pasta Salad, Southern Baked Beans, or Baked Potatoes to finish it off.

Wet v dry: there's the rub

In her book Jerk Barbecue from Jamaica, Helen Willinsky says that a dry rub, rather than a marinade, is the "more authentic method of preparing jerk flavouring". Her dry rub contains onion and spring onion, fresh thyme, salt, allspice, nutmeg, cinnamon, black pepper and scotch bonnet chilli peppers, while the marinade adds soy sauce, oil and vinegar. An article on jerk published in the New York Times explains, somewhat unappetisingly, that the dry rub makes for "a crustier jerk a wet rub produces juicier meat".

Willinsky's dry rub goes up against the marinades used by Lucy Pilkington, Saveur, and a website called Jamaican Food, and while I don't find that the acidic vinegar or lime juice in the marinades has any discernible tenderising quality, it does impart a pleasing tanginess (I prefer the lime juice to the vinegar in this respect: it tastes fresher).

The soy sauce also penetrates the meat to provide a lovely savoury flavour. (If you, like me, scoff at the idea of soy in a Jamaican marinade, allow me to quote from a post on this very subject on the food forum egullet: "Sorry but Jamaicans sure do use soy sauce, called soya sauce here. As in the States, Chinese laborers were brought in to build the railways. Every little one room grocery store carries it. It is also a main ingredient in 'brown stew chicken and fish' another common offering at restaurants or cookshops that cater to Jamaicans." It may not be an ingredient used by the Maroons, but it does taste damn good.)

What cut of chicken should I use for BBQ Chicken?

The best bbq chicken is made with bone-in, skin-on chicken. You can use all parts of the chicken, or just specific parts that you like. Drumsticks, wings, thighs, and breasts all make excellent bbq chicken. Cooking time will vary slightly if you are only using one cut of chicken. Chicken needs to be cooked to an internal temperature of 165 degrees Fahrenheit and cooking times will always vary based on the size and thickness of your chicken.
