  • 1 lime, juiced
  • 1/2 lemon, juiced
  • 110g dark brown soft sugar
  • 1 1/2 teaspoons salt
  • ground black pepper to taste
  • 6 tablespoons olive oil
  • 6 skinless, boneless chicken breast fillets

  1. In a large glass bowl, mix the cider vinegar, mustard, garlic, lime juice, lemon juice, dark brown soft sugar, salt and pepper. Whisk in the olive oil. Place chicken in the mixture. Cover and marinate 8 hours or overnight.
  2. Preheat an outdoor barbecue for high heat.
  3. Lightly oil the cooking grate. Place chicken on the prepared barbecue and cook 6 to 8 minutes per side, until juices run clear. Discard marinade.

This barbecue chicken sandwich recipe is made super easy by boiling the chicken breasts, and then cooking them in BBQ sauce for delicious flavors. Serving the BBQ shredded chicken with buns makes for a delicious and simple dinner perfect for a busy weeknight that your whole family is sure to love.

Add any of your favorite sandwich toppings to go along with the bbq shredded chicken sandwich. The basic barbecue chicken would taste great topped off with pickles or Coleslaw.

As far as the sauce, we’ve made a few different versions of homemade barbecue sauce that you can try in this recipe to experiment with the flavors. Instead of regular BBQ Sauce try our Memphis BBQ Sauce or Root Beer BBQ Sauce to Change things up.

When you’re putting together the BBQ Chicken sandwiches, feel free to use your favorite kind of bun. It would taste great with regular hamburger buns, hoagies, french rolls, or brioche hamburger buns. You could also steer away from a simple dinner option, and turn these into a party appetizer with mini buns to make chicken sliders.

Wet v dry: there's the rub

In her book Jerk Barbecue from Jamaica, Helen Willinsky says that a dry rub, rather than a marinade, is the "more authentic method of preparing jerk flavouring". Her dry rub contains onion and spring onion, fresh thyme, salt, allspice, nutmeg, cinnamon, black pepper and scotch bonnet chilli peppers, while the marinade adds soy sauce, oil and vinegar. An article on jerk published in the New York Times explains, somewhat unappetisingly, that the dry rub makes for "a crustier jerk a wet rub produces juicier meat".

Willinsky's dry rub goes up against the marinades used by Lucy Pilkington, Saveur, and a website called Jamaican Food, and while I don't find that the acidic vinegar or lime juice in the marinades has any discernible tenderising quality, it does impart a pleasing tanginess (I prefer the lime juice to the vinegar in this respect: it tastes fresher).

The soy sauce also penetrates the meat to provide a lovely savoury flavour. (If you, like me, scoff at the idea of soy in a Jamaican marinade, allow me to quote from a post on this very subject on the food forum egullet: "Sorry but Jamaicans sure do use soy sauce, called soya sauce here. As in the States, Chinese laborers were brought in to build the railways. Every little one room grocery store carries it. It is also a main ingredient in 'brown stew chicken and fish' another common offering at restaurants or cookshops that cater to Jamaicans." It may not be an ingredient used by the Maroons, but it does taste damn good.)

Oven Baked BBQ Chicken Recipe


  • 3 pounds chicken , cut into serving pieces, or 9 bone in chicken pieces such as thighs and legs
  • oil for frying
  • 1 onion , sliced into thin rings

BBQ Sauce:

  • 3/4 cup brown sugar , or unpasturized honey
  • 1/2 cup ketchup
  • 1/4 cup vinegar
  • 1 teaspoon dry mustard
  • salt and pepper to taste

You can get gluten free ketchup. In fact, most brands of ketchup are gluten free. Just make sure if it’s important to you.

Place chicken on a rimmed baking sheet. Make spice rub: Combine all ingredients in a small bowl. Sprinkle spice mix over chicken and rub in. Cover with plastic wrap and chill for at least 6 hours.

Make sauce: Combine all ingredients in a large pan. Bring to a boil, stirring continuously. Simmer, uncovered, for 15 minutes, stirring occasionally, until thickened. Remove from heat.

Preheat grill to medium low oil when hot. Cook chicken for 10 minutes, turn over and cook for 8 minutes longer. Brush sauce on one side of chicken, turn over and cook for 3 minutes. Brush remaining side with sauce, turn over and cook for 3 minutes, or until cooked through.

For the sauce

  • 1 cup unsweetened apple juice
  • 1/2 cup cider vinegar
  • 1 cup ketchup
  • 2 Tbs. Dijon mustard
  • 2 Tbs. pure maple syrup
  • 2 tsp. Worcestershire sauce
  • 1/2 tsp. hot sauce, such as Tabasco
  • 1/2 tsp. kosher salt
  • 1/4 tsp. freshly ground black pepper

For the rub

  • 1 Tbs. light brown sugar
  • 2 tsp. kosher salt
  • 1 tsp. smoked paprika
  • 1 tsp. chili powder
  • 1 tsp. granulated garlic
  • 1/4 tsp. freshly ground black pepper

For the chicken

  • 6 chicken thighs
  • 6 chicken drumsticks
  • 2 cups hickory or applewood chips, soaked in water for at least 30 minutes and drained

  • 2 Tablespoons plus 1 teaspoon OLD BAY® Seasoning, divided
  • 1 Cup French's® Tomato Ketchup
  • 1/4 Cup cider vinegar
  • 1 Tablespoon molasses, honey or packed brown sugar
  • 3 Pounds bone-in chicken parts
  • 1 Tablespoon oil

Mix 2 tablespoons of the OLD BAY, ketchup, vinegar and molasses in medium bowl until blended.

Sprinkle with remaining 1 teaspoon OLD BAY.

Prepare grill for indirect medium-low heat (275°F to 300°F).

Preheat grill by turning all burners to medium.

Turn off burner(s) on one side.

Place chicken on unlit side of grill.

Grill 40 to 45 minutes or until internal temperature of thickest part of chicken is 165ºF, turning occasionally.

Move chicken to lit side of grill.

Brush with barbecue sauce.

Turn lit side of grill to high.

Grill, uncovered, 3 to 5 minutes longer or until chicken is charred, turning once and brushing with additional sauce.
