RECIPE PREPARATION Fluffy and delicious langosi:

We make a 50 ml mayonnaise. Hot water, yeast, sugar, flour. Let it rise. Then add it to the rest of the flour and the other ingredients.

We knead a crust softer than bread. Leave to rise for 30 minutes.

Form with your hand well greased with oil 6 balls that you leave to rise for 30 minutes.

We flatten each ball by hand until we get a shape as big as the pan in which we fry them! After frying them, let them drain on absorbent paper.

Grease with sour cream and grate cheese or cheese on top!

As everyone knows, there is this Romanian tradition of welcoming the feast of the 40 saints, on March 9 with this sweet and at the same time good preparation because you can no longer stop eating, namely martyrs. These martyrs are made like small octopus-shaped rolls that soak in an incredibly good and fragrant juice, greased with honey and sprinkled with walnuts, mmmm. a goodness, they are super delicious, fluffy on the inside, crispy and sweet on the outside, good, good. From the composition I made, 40 martyrs came out, neither too big nor too small!

1 kg of flour
25 gr yeast
2 tablespoons honey
250 ml of warm water
6 tablespoons sugar
3 tablespoons oil (I put more about 5-6)
essences (rum, vanilla, orange, lemon)

300 ml of water, even more
150 gr sugar
1 sachet of vanilla sugar
ground walnut

First of all, prepare the mayonnaise that is left to ferment for about half an hour, it is made from fresh yeast, 1 teaspoon of sugar, 2 tablespoons of warm water and 2 tablespoons of flour, mix all the ingredients and leave in a warm covered place. the container with a lid have a napkin until it makes blisters.
In a larger bowl add sifted flour, make a hole in the middle and then add mayonnaise, essences, sugar, warm water, honey, a pinch of salt and the 3 tablespoons of oil.

Fluffy and tasty pretzels

I think that one of the most appreciated recipes posted by me so far on Instagram was that of fat pretzels. At the beginning I said that it doesn't make sense to post it on the blog, being a pretty trivial recipe. However, on my Instagram account it was a real success, so today I present both options: sweet pretzels with honey and salted pretzels (a version with parmesan and bacon and one with telemea and green onions).

Ingredients for the basic recipe (5, 6 palm-sized pretzels):

  • 500gr flour,
  • 200-220ml of milk,
  • 25gr of fresh yeast (7gr of dry yeast),
  • 2, 3 tablespoons vegetable oil,
  • 50gr butter,
  • 1 egg at room temperature,
  • 1 tablespoon sugar,
  • 1 pinch of salt,
  • 1 extra egg for greased.

  • 1 teaspoon vanilla essence,
  • honey,
  • sesame.

  • 100gr browned bacon in the pan,
  • 50gr parmesan,
  • 1 bunch of green onions,
  • 100gr telemea.

Both pretzel variants start from the basic recipe. In a saucepan, lightly heat the milk so that it does not burn on our fingers. In a bowl, grind the yeast and put the sugar, 4 tablespoons of lukewarm milk and a tablespoon of flour. Leave the mayonnaise to ferment for about 10 minutes.

I prefer to melt the butter in the remaining warm milk, but you can do it separately. After the mayonnaise has risen, put the flour, the warm mixture of milk and butter, the mayonnaise, the egg, the salt in a large bowl and start to knead.

Depending on the degree of humidity of the flour, we add more milk or flour, so as to obtain a soft and slightly sticky dough. Knead for about 5-10 minutes maximum and gradually add the oil. Leave the dough to rise in a warm place, then divide it into 6 equal balls, form the pretzels, grease them with beaten egg, sprinkle with sesame seeds and bake in the preheated oven at 180C for about 20-25 minutes.

For the sweet pretzel version, we add in addition (compared to the basic recipe) the vanilla essence and after we take them out of the oven we grease them with honey while they are still hot.

Fat pretzels with honey

For the salted pretzel version, when we divide the dough into 6 equal balls and each piece into 2 smaller balls, we carefully spread the small pieces of dough and fill them either with telemea and green onions, or with parmesan and crispy bacon. Before putting them in the oven, grease them with beaten egg and sprinkle with either sesame, parmesan or anything else that comes to mind.

These pretzels are sooo delicious and fluffy, so I urge you to try them. You will definitely like it!
