Ingredients

  • 3 Cups chopped fresh pineapple
  • 2 cucumbers, peeled, seeded and sliced
  • 2 green onions, thinly sliced
  • 1/4 Cup roughly chopped mint

Sweet and Tangy Cucumber Salad

I think that almost any culture that has cucumbers has some form of this recipe. When I was surfing the internet to see how everyone else (meaning the rest of the world besides me) made cucumber salad with a vinegar based solution, most of the ones I found were pretty similar. They varied mainly in the type of vinegar and herbs used.

The cucumber salad that I used to eat in the South was flavored mainly with apple cider vinegar, salt, and pepper. I loved it. Honey Bun’s family, however, used white vinegar, water, and a little sugar. I loved that one, too. Consequently, the recipe that I am using here is a combination of both of them.

On the off chance that you are wondering about how I made those fancy scallops on the cucumbers, all I can say is, “It wasn’t me.” I used Armenian cucumbers and that’s the way they look. I will, however, take any kudos that you want to toss my way for growing them in my garden. There are usually four or five or twelve different varieties that I grow each year, but this is the first time that I have grown the Armenian variety. They were very easy to grow, requiring no more care than any other cucumber. As a side note, these cucumbers are actually considered to be a member of the melon family rather than the cucumber family.

This is what the cucumbers look like whole. I put a Sharpie marker next to them so that you can get an idea of how big they grow. I may have let one of them get a little too big, but I have to tell you that nothing in my garden is ever allowed to grow past its prime. Ever. Not cucumbers and definitely never zucchini. It would be unthinkable. Yes siree, I am out there every day cultivating and tending and anticipating the very moment of perfection for each and every vegetable. You believe me, don’t you?


Japanese Cucumber Salad (Sunomono)

This time I want to share a very simple, but a very tasty salad with you. I am not even sure if it's a salad or a side dish, or an appetizer. What I am sure about is that it's insanely delicious! I am talking about a classic Japanese Cucumber Salad, also known as Sunomono. Actually, Sunomono just means "vinegared things" in Japanese, so any other fresh vegetables can be used. However, the cucumber version is undoubtedly the most popular one.

Basically, it's a thinly sliced cucumber marinated in a dressing made of rice vinegar, soy sauce, salt, sugar and sprinkled with sesame seeds. It's also important to squeeze all the water from cucumbers before mixing them with the dressing! I made the traditional and simple version, but you can also add some seaweed (if you like it) or some seafood, such as shrimp, crab, or else. Sunomono is usually made with Japanese cucumbers (Persian cucumbers are also considered a great choice), but I wasn't able to find any of these, so I used a good old English cucumber and the result was outstanding too.

This salad is usually served before the main meal in Japan. It is perfect for increasing your appetite. If you have ever been in Japanese restaurants you should have seen it on the menu. However, I also enjoy it as a side dish with sushi, Japanese cabbage pancakes or any other, even not Japanese, dish!

I love everything about this Japanese Cucumber Salad. It is refreshing, light, and sweet & tangy at the same time! The vinegar dressing does the job. Oh and don't forget the pleasant crunchiness of the cucumbers. Also, it requires almost no time to make. You can throw it together in under 5 minutes!

Ingredients

(12- or 14-ounce) block extra firm tofu

palm sugar or brown sugar

sambal oelek (or more, to taste)

cucumber, peeled and cut into chunks or slices

Granny Smith apple, cut into chunks or slices

pineapple chunks or slices

unsalted or lightly salted peanuts, crushed

Instructions

Fry the tofu: Cut tofu into 1-inch cubes and gently press between clean kitchen towels or paper towels to absorb excess moisture. Add 1/2-inch oil to a skillet and heat over medium-high. Oil should be hot enough that a small piece of tofu sizzles but does not burn. Fry the tofu cubes in a single layer until crispy on all sides. This may need to be done in batches. Drain and cool on a towel-lined plate.

Make the dressing: Whisk together the tamarind, vinegar, sugar, sambal, and salt.

Assemble the salad: Toss the cooled tofu, cucumber, apple, jicama, pineapple, and half of the peanuts together in a large bowl and toss with the dressing.
